PureSpelt Bread Mix in a Bottle (gift idea)
Preliminary time: approx. 3 hours rising time
Preparation time: approx. 20 minutes
Baking or cooking time: approx. 50 minutes
1 litre bottle, makes one loaf approx. 30 cm
Bread Mixture
250 g PureSpelt white flour
200 g PureSpelt whole grain flour (Vollkornmehl)
75 g PureSpelt flakes or rolled oats
50 g ground hazelnuts
50 g seeds, e.g. pumpkin seeds
25 g sesame seeds, black or white
2 tsp salt
1 package dry yeast (15 g)

100 g plain yogurt
approx. 300 ml water
a little PureSpelt white flour for forming
some pumpkin seeds for garnish

Using a funnel, pour the dry ingredients into the bottle in layers. After each ingredient, tap the bottle several times on a cloth-covered table, so that the contents are compacted. Close the bottle, label and decorate at will.

For the dough: place all ingredients in a bowl. Add the yogurt and water, and knead briefly to form a smooth dough. Cover and let rise at room temperature for 2-2 1/2 hours or until doubled, pulling or folding the dough 1-2 times.

Form the proved bread into a roll and place in a parchment-lined loaf pan. Cover and let rest for an additional 20-30 minutes.

Top the loaf with pumpkin seeds, then place the tin in a cold oven. Bake at 200 °C for 45-50 minutes, then remove from the oven and let cool on a cooling rack.
Tips
You can also add additional chopped, dried fruit, chocolate or nuts to the mixture. Or for a savoury version, fill finely chopped sun-dried tomatoes and dried herbs with the other layers.
