PureSpelt Banana Pecan Cake

Baking or cooking time: approx. 45 minutes
28-30 cm loaf pan
Batter
3 ripe bananas, approx. 300 g, peeled and lightly mashed
100 ml coconut milk
75 ml maple syrup or apple syrup (Apfeldicksaft)
2 eggs
100 ml almond milk
1 tbsp vanilla extract
100 g PureSpelt muesli
150 g PureSpelt half white or dark flour (Ruchmehl)
50 g oats
15 g baking powder
1 tbsp cinnamon
100 g dates, pitted and roughly chopped
1 handful pecans, to garnish

Batter: Mix together all the ingredients up to and including vanilla extract. Mix together the muesli, flour, oats, baking powder and cinnamon and add to the first mixture, add the dates and stir until smooth.

Spread into the prepared loaf pan and smooth the top. Sprinkle with pecans and bake in the bottom of an oven preheated to 180 °C for 40-45 minutes. Test with a toothpick, and if there are still crumbs clinging to it, bake for an additional 5-10 minutes. Remove the cake from the oven, let cool briefly, then remove it from the pan and let cool on a cooling rack.
