PureSpelt Lemon Muffins
Preparation time: approx. 30 minutes
Baking or cooking time: approx. 20 minutes

Batter
200 g butter, soft
100 g sugar
1 pinch salt
4 eggs
1organic lemon, zest and juice
150 g PureSpelt half-white or white flour
75 g ground hazelnuts
1 tsp baking powder
100 g white chocolate, in 12 pieces
1 organic lemon cut into 12 thin slices
icing sugar to garnish

Batter: cream the butter, sugar and salt. Add the eggs one at a time, beating until the batter is light in colour. Add the zest and juice. Mix together the flour, hazelnuts and baking powder, then gently fold into the butter mixture. Place the batter into a muffin tin lined with paper cups, adding a piece of chocolate to each muffin, and placing a slice of lemon on top.

Baking: Bake the muffins in the bottom half of an oven preheated to 180 °C. Remove from oven and—still warm or cooled—dust with icing sugar and serve.
