PureSpelt Pasta Salad
Preparation time: approx. 30 minutes
Baking or cooking time: approx. 5 minutes

Pasta
350 g PureSpelt Pasta, e.g. flowers from the Fidirulla pasta company
water, salted
Sauce
1 organic lemon, zest and juice
3-4 tbsp vegetable stock
5-6 tbsp olive or rapeseed oil
2 tsp apricot Mostarda
salt and pepper
Salad
250 g cherry tomatoes, halved
200 g artichoke hearts, quartered
150 g mixed olives
basil leaves, torn
edible flowers, e.g. chive blossoms

Cook the pasta in boiling salted water until al dente (according to the package instructions), strain, rinse with cold water and let drain well.

For the sauce, mix all the ingredients well.

Just before serving, carefully mix the pasta and remaining salad ingredients with the sauce, place in a bowl, garnish and serve.
Tips
If desired, you can add some protein to the salad, like mozzarella balls, fried chicken, tofu or chopped egg.
