PureSpelt Pasta Flowers
serves 4
Pasta dough
300 g PureSpelt white flour
2 tbsp PureSpelt semolina (Griess)
3 eggs
a little water
some water or egg white for forming
Filling
250 g ricotta
the zest and a few drops of juice from an organic lemon
75 g Sbrinz, grated
1 egg yolk
salt and pepper
a little soy sauce and chili sauce to serve (if desired)

For the dough: mix the flour and semolina in a bowl and make a well. Whisk the eggs together, then pour into the well and mix everything to a firm, smooth dough. Add a little water if necessary. Cover and let rest at room temperature for 30 minutes.

For the filling: mix all ingredients and season.

To form: Using a little flour, roll out the dough thinly, in portions. Cut out rounds 9-10 cm in diameter. Place a teaspoon of filling in the middle of each round, brush the edges with a little water or egg white, and shape into flowers. Cook in a steamer basket for 8-12 minutes. Remove the PureSpelt pasta flowers from the steamer basket with chopsticks and enjoy with a little soy and chilli sauce.
Tipps
If desired, serve the pasta flowers with browned butter and grated Sbrinz. Or place the flowers on tomato sauce and bake briefly with Sbrinz.
