PureSpelt fig open sandwiches
to serve 4
8 PureSpelt rusk biscuits, approx. 125 g
Topping
250 g of quark
2-3 tablespoons of sugar
1/2 tablespoon of cinnamon
A few drops of lemon juice
6-8 ripe figs, cut into wedges
Icing sugar for dusting

Lay the PureSpelt rusk biscuits on a serving plate or on individual plates.

For the topping, stir together all the ingredients up to and including the lemon juice, spread evenly onto the PureSpelt rusks. Lay the fig wedges onto the topping, dust with icing sugar.
Suggestions
Decorate with whipped cream to taste. Instead of figs use grapes, plums or a mixture of berries.
