PureSpelt Banana Casserole
Preparation time: approx. 15 minutes
Baking or cooking time: approx. 40 minutes
to serve 4-6, baking dish of approx. 24 cm diameter
Casserole
3 bananas, peeled, approx. 300 g of pulp
75 g of brown sugar
2 eggs
1/2 teaspoon of salt
1 teaspoon of vanilla sugar
1 teaspoon of cinnamon
A little nutmeg, ground
1 teaspoon of baking powder
2.5 dl of milk
1.5 dl of cream
350 g of PureSpelt flakes (or half PureSpelt/half oat flakes)
1 handful of almonds or walnuts, chopped
Butter for greasing the casserole dish

Finely mash the bananas in a mixing bowl using a fork. Stir in the sugar, eggs, salt, vanilla sugar and spices until well blended. Add the baking powder, milk and cream. Add the PureSpelt flakes, mix well and pour the mixture into the buttered casserole dish, smoothing it out. Sprinkle with almonds or walnuts.

Bake the casserole in the middle of the oven preheated to 180°C for 35-40 minutes. Remove from the oven and enjoy hot, lukewarm or cooled.

Serve the casserole with vanilla cream, vanilla sauce, yogurt, cottage cheese, fruit compote or berry sauce according to taste.
If desired, mix 150 g of applesauce in addition to or instead of the raw sugar into the casserole and bake.
